Day 1 of my #whole30 challenge. This may be one of my favorite recipes ever!
I folded the bacon over to make little patties.
While the bacon cooks, shred a sweet potato {I used a Japanese sweet potato} Mix in an egg, salt, pepper and paprika.
Any fillings will work, but I used a tomato and avocado to fill it.
What you need: — {This makes 1 sandwich just increase for however many you need}
2 eggs
1/2 sweet potato
1 avocado
2 pieces of bacon
a pinch of ghee
Salt, Pepper and Paprika to taste

Cooking bacon- I folded them into little patties to fit on the sandwich better
While the bacon cooks shred sweet potato- rinse and strain it dry with a clean kitchen towel. The key to crispiness is to have the potato shreds dry. Once dry, add egg {you can use just the white if you don’t want the potatoes to be as eggy/dough like} , salt, pepper, and paprika. I cooked the egg in the bacon grease and then put aside. Add a little ghee to the pan and place the patties in it to cook. Brown each side about 3 minutes each side on medium heat. While potatoes cook slice toppings. I used tomatoes and avocados. Pile them up and enjoy!
