Homemade Pizza… A Quick and Yummy Dinner

This is the easiest dinner I have ever made. Zucchini and arugula pizza.  It was better than any restaurant pizza I have ever had! {Pat on back!}  It was so delicious I made it again a few days later.

 

What you need:

Premade pizza dough
1 zucchini
5 TBS hummus
3 cups arugula
7 sun-dried tomatoes
1/4 purple onion sliced
1/4 cup sunflower or pumpkin seeds
1/2 cup feta
1/2  lemon juiced
2 TBS olive oil
Black pepper
salt

Tools:

2 baking sheets- 1 lined in parchment paper
1 large bowl

Prep:

Preheat oven to 425

Roll out pizza dough on parchment-lined baking sheet.  I used my fingers.  I also greased the parchment paper and then sprinkled the dough with flour where I was going to touch it.  Poke with fork.   Bake for 7-10 minutes until crust is golden.  Then remove to slightly cool.

Cut zucchini into slices and toss in a bowl with 1 tbs of olive oil and salt and pepper.  Place evenly on a baking sheet.  Bake at the same time as the crust.

I don’t have two baking sheets so I used a casserole dish to bake the zucchini.

While those are baking, While those are baking, toss arugula, sun dried tomatoes (slice into smaller pieces if necessary), purple onion, seeds, lemon juice, salt and pepper in the same bowl you used for the zucchini.  Set aside.

Make:

After crust is slightly cooled apply hummus in an even layer; then place the zucchini in an even layer. Sprinkle arugula mixture across pizza and finish with feta cheese.

EAT:

Slice it and eat up!  I added some chicken breast from the night before sliced because my husband won’t eat anything without meat protein.  Either way is yummy thought.
