Easy Egg and Sausage Breakfast Bake For A Last Minute Brunch

This egg and sausage casserole is the easiest recipe breakfast recipe EVER! You can use fresh ingredients or a freezer and the leftovers stores in the fridge for several days.

Grab a casserole dish and apply a light amount of butter or oil. Pop in a layer of shredded hashbrowns. I used frozen but you can totally shred and season a whole potato. While that sits, I rough chopped an onion and bell peppers and then sauteed it in a little oil. Season with salt and pepper and a little red chili flakes. When they are almost done add in some sausage crumbles until it is just warm. Again, I used freezer turkey sausage.

Layer it on top of the potatoes.

Next, beat 8 eggs with some salt and pepper and dump on top of all of it. Top with shredded cheese. I like to get a brick of cheddar and shred it so it melts nicer.

Bake at 350 for about 20 minutes until cheese is melted and eggs are firm but not dry.

Scoop and serve warm or cold! I like it with a dab of siracha. YUM! This is so quick and easy to make. It is the perfect dish to serve at your next brunch. It goes great with toast or a salad!
