Cauliflower Chicken Stew… Skin Care Shape-Up Challenge Day 9

I found a Williams & Sonoma gift card from last Christmas and popped over to find something fun.  Introducing my new inspiration the Cuisinart FP-12DC super food processor.

After my purchase I ran over to WholeFoods to get some inspiration for dinner tonight.

Here is my take on stew.  **** note I am NOT a chef or even a very good cook so this is super simple and easy to alter to your own liking.

What I used:

2 organic,skinless chicken breast
1 can organic coconut milk
1 large lemon
1 tsp Thai red curry power
2 cloves garlic
1 whole cauliflower
1 tsp coconut oil
1/2 cup water
salt & pepper to taste

And how I started:

Pre-heat oven to 350.  Cut washed cauliflower in two small cloves.  Place in baking with garlic and water.  Bake for 30 minutes or until soft.  While that is cooking juice lemon and keep pulp.  Cut chicken in bite size pieces, cook fully in large pan with coconut oil.  Add lemon, coconut milk, red curry paste, salt & pepper.  Stir and let simmer on low occasionally stirring.  Puree cauliflower and garlic and add to chicken.  Simmer for another 5 or so minutes.  ENJOY! I think next time I want to add more lemon and something to make it spicier.  But overall I loved my first attempt at stew.
