BLUE APRON Butternut Squash Curry
A few years ago KP and I decided to make our lives easier by simplifying things. Part of that was moving to a smaller customized house, getting rid of a lot of our furniture and clutter, spending less time dining out, and eating dinner at home at least 4 nights a week. One of the things that helped me do that was meal/grocery delivery services.
I tried the precooked/prepped versions but I just didn’t like them very well. Cooking is fun for me now and I didn’t want to just reheat a meal. So I liked the meals that came raw but with instructions on how to make the meal. For us, this is more cost-effective and cuts back on waste. There are only two of us and I found a lot of times we threw away a lot of groceries. Usually, we get a dinner portion for each of us and lunch for KP the next day out of each meal.
KP had surgery a few years ago and the previous meal service was a bit too high in calories for him. Recently Blue Apron contacted me to review their meal delivery service and I was excited to try new meals that were almost half the calorie count of my previous service. Blue Apron is a weekly meal kit delivery service that makes cooking at home a breeze. I was a little intimidated by their recipes but they were all really simple.
This squash curry was my first recipe with Blue Apron. The recipe was simple and customizable. For example, I like butter on the rice I have had since I was a kid. Also, I LOVE garlic and I added a few extra cloves that I had in my fridge. With this recipe, the spice mix was VERY spicy so I put just a pinch in and then removed half the curry for KP adding the rest of the mix for myself.
Overall, I was really happy with the simplicity of the kit, the cost, and the flavor.
