My goal for Olivia was to try 1000 different flavors before 2. Luckily, Olivia is a good sport about it and only has one thing she doesn’t care for–blackberries. To help introduce her to different flavors and textures I usually make all her food. Like the baby puffin bites that I’ll be sharing with you today! But, when things are super busy LittleSpoon (use code LS-DORAN for $20 off YOUR FIRST ORDER.) has been a great addition. We partnered with them earlier this year and I am so glad we did. Little Spoon offers a service that allows parents to customize their child’s meal plans that are delivered directly to your doorstep each week.
Sometimes I order or they send more than I need and instead of freezing them, I make fun snacks with them. This week I made Puffin bites! A hybrid muffin/pancake. These are so simple to make. Olivia LOVED them and with a bit of syrup, I even got my husband to try them.
Ingredients (makes about 3 dozen mini size)
1 cup all-purpose flour
1/2 TBS baking powder
1 egg
1.5 TBS Sugar
1 tsp Salt
2 TBS melted butter
1 Cup milk-room temp
1 tub LittleSpoons ANY FLAVOR
Directions
Preheat oven to 400. Whisk dry ingredients together– flour, sugar, baking powder, and salt in a bowl. Add egg, milk, LittleSpoon, and butter; whisk just until combined. The batter will be kinda lumpy. Pour into mini muffin greased muffin tins. Bake for 7-9 minutes or until a clean baking stick.
How cute are Olivia’s new jammies from @monicaandandy + @littlespoon !?
